Kimchi is a spicy fermented cabbage side-dish originating in Korea. It combines cabbage, garlic, ginger, red chili pepper, salt, and fermented fish sauce. Kimchi isn’t a vegetable as such, but it’s very popular and so different to regular cabbage. In addition to the nutrients present in cabbage, garlic, and ginger, kimchi provides a host of probiotic bacteria. Also, due to the fermentation process, the nutrients in all the vegetables are easier to digest and absorb.
