While spaghetti might be low in nutritional value, that isn’t the case for spaghetti squash. Spaghetti squash is (technically) another fruit, but we use it as a vegetable in cooking. This pseudo vegetable belongs to the pumpkin and squash family of produce. Spaghetti squash is very adaptable, and we can bake, boil, roast or mash it, or even use it as ‘vegetable spaghetti’.
