Like kimchi, sauerkraut isn’t a real vegetable as such. However, it is a fermented vegetable from Germany that is popular throughout the world. Like all fermented foods, it contains a range of beneficial bacterias that can benefit health. The primary bacteria in sauerkraut is called lactobacillus.

Research over 15 separate trials demonstrates that this probiotic may improve the lipid (cholesterol) profile. Saurkraut’s nutritional profile is similar to cabbage, but the nutrients will be more bioavailable due to the fermentation process.
