Tex-Mex Chicken Salad

Brighten up any day and try this colorful, filling salad for lunch.

Ingredients:

- 1/2 small head green leaf lettuce, torn

- 1 c. shredded rotisserie chicken

- 1 c. canned pinto beans, rinsed

- 3/4 c. fresh corn kernels (from 1 ear)

- 1/4 red onion, thinly sliced

- 2 tbsp. fresh lime juice, plus wedges

- 1 tbsp. olive oil

- 1/2 tsp. honey

- Kosher salt and pepper

Method: Divide lettuce, chicken, beans, corn, and onion between two containers. Add a lime wedge to each. In a bowl, whisk together lime juice, oil, honey, and pinch each salt and pepper. Divide among two tiny containers and pack with salad. Drizzle over just before eating.
