Peach Caprese Salad

Swap out typical tomatoes for summer’s sweetest stone fruit! Peach Caprese Salad is a delicious way to switch up the classic tomato, basil and mozzarella combo that everyone starts to crave as the temps creep up. We kept the fresh cheese and fragrant herbs of the traditional recipe, but used juicy grilled peaches instead of tomatoes for extra sweetness and a little smoke. To add even more interest to the favorite summer salad, we whisked together a quick dressing of fragrant Meyer lemon, honey, olive oil and almonds (for crunch!) to drizzle over everything before serving.
This fresh, 15-minute meal makes a delicious side to any grilling recipe, or a light vegetarian dinner with grilled bread. When choosing the perfect peaches at the grocery store or farmer’s market, look for firm fruits without bruises or wrinkled skin. Then, take a quick sniff (really!). At peak ripeness, a peach should smell pleasantly sweet—which is exactly how it will taste. If your peaches aren’t quite ripe, you can store hard, unripe peaches in a paper bag with a few holes poked in it for 3-5 days. To speed up ripening, add an apple, which releases ethylene gas to accelerate the process. Once your peaches are softened slightly and deliciously fragrant, it’s time to make this salad!
Ingredients:
- 2 peaches, each cut into 8 wedges
- 2 tbsp. plus 2 tsp olive oil
- 1 tsp. grated Meyer lemon zest plus 1 1/2 Tbsp lemon juice
- 1 tsp. honey
- Kosher salt and pepper
- 1/4 c. roasted almonds, chopped
- 12 oz. fresh mozzarella
- 1/4 c. fresh basil, torn, plus small leaves, for serving

Method: Heat grill to medium-high. Brush peaches with 2 teaspoons oil and grill until grill marks appear, about 1 minute per side. Transfer to plate and let cool slightly. In a small bowl, whisk together lemon juice, honey and 1/4 teaspoon each salt and pepper until honey has dissolved. Whisk in remaining 2 tablespoons oil; stir in lemon zest and almonds. Slice mozzarella, arrange on platter and top with peaches. Fold basil into almond mixture and spoon over peaches. Sprinkle with cracked pepper and small basil leaves if desired.
