Vegan “Cheesy” Flatbread Recipe

Ingredients:
- 1 cup plus 1 teaspoon whole wheat pastry flour
- 1/3 cup oat flour
- 1 1/2 teaspoon baking powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon ground coriander
- 1/2 teaspoon kosher salt

- 1/2 cup cashew yogurt
- 1/4 cup extra virgin olive oil
- about 1/2 cup shredded vegan mozzarella cheese
- 1/4 cup butter-flavored coconut oil
Method: In a medium bowl , combine the primary 8 ingredients and blend throughly with a spatula or wooden spoon. Cover with wrapping and let rest for a minimum of half-hour . Divide the dough into four portions and flatten together with your palm. Holding the flattened dough in your palm, add a few large pinches of cheese to the middle of the dough.

Fold the dough over and round the cheese and re-flatten therefore the cheese is within the middle of the disc. Repeat with the opposite three portions of dough. Heat a tablespoon of the butter-flavored copra oil during a small skillet over medium heat. Place one among the flatbreads into the pan and sear on all sides for about 3-4 minutes per side or until golden brown. Repeat with the remainder of the flatbreads. Carefully transfer to a plate.
