Ingredients :

- 1 cup cauliflower

- 1 cup eggplant/ brinjal

- 1/2 teaspoon sugar

- 4 tablespoon mustard oil

- 1 cup pumpkin

- 1 cup carrot

- salt as required

- 1 teaspoon turmeric

- 1/2 cup peas

- 1 cup potato

- 1/2 cup grated coconut

- 2 drumstick

- 1 teaspoon panch phoron

- 2 bay leaf

Method : To prepare this amazing entremots recipe, wash, peel and chop all the vegetables as desired. Next, mix together all the vegetables during a bowl with coconut, add water in it and keep aside. Heat oil during a pan over medium flame, and add bay leaves, panch phoran masala and green chillies. await 2-3 minutes then drain water from the vegetables. Now, turn the stove to high flame and add the vegetables within the pan. Mix well.

Add salt and turmeric powder and let the mixture cook for 3-5 minutes on high flame. Once done lower the flame, and let the vegetables cook until they become soft. Once done, add sugar and coconut and blend well. Turn off the flame when done and garnish with fresh coriander leaves, and serve hot.
