Prawn and Mushroom Miso Soup

Ingredients :
- miso soup paste 2 tbsp
- shiitake mushrooms 4, sliced
- pak choy 50g, leaves separated
- cooked peeled prawns 50g
- soba noodles 30g, soaked in boiling water for 2 minutes and drained
- soy sauce 1 tsp
- coriander chopped to make 1 tbsp (optional)
- red chilli ½, sliced (optional)

Method : Mix the miso paste with 500ml boiling water and bring to a simmer. Add the mushrooms and greens, and simmer for 4 minutes until softened. Add the prawns to warm through for a minute, then remove from the heat. Add the noodles, season with soy, then scatter with the coriander and chilli to serve, if you like.
