Lemon Raisin Scones

Ingredients :
- 3 cups flour
- 2/3 cup sugar
- 4 tsp baking powder
- ½ tsp salt
- Zest of one lemon finely grated
- ¾ cup very cold butter cubed
- 1 cup raisins light or dark, your preference
- Juice of one lemon
- 1 cup milk
- 2 tsp vanilla extract

Method : In a kitchen appliance , combine the flour, sugar, leaven , salt and lemon peel. Cut within the butter. Pulse process until this mixture resembles a rough meal. It's vital that pea sized pieces of butter remain during this mixture. Remove to an outsized bowl and add the raisins. Mix together the juice , milk and vanilla. Pour this over the surface of the dry mixture. Toss all at once gently with a fork merely enough to make a dough ball. it's important that you simply work this dough as little as possible or the finished scones are going to be too dense and heavy.
Roll to 1 inch thickness and cut out scones with biscuit cutter or in triangles with a pointy knife and place on parchment lined baking sheet. If desired you'll brush the tops of the scones with an egg wash of 1 egg beaten along side 1 tbsp water. you'll sprinkle the tops with turbinado sugar if desired but this is often , of course, optional. Bake at 375 degrees F for 25 minutes or until light golden brown. Baking time will vary counting on the dimensions of your biscuit cutter. This recipe makes 8 large scones.
