Healthy Pasta Salad

Healthy Pasta Salad is a summertime must have for BBQ, potluck, picnic and pool parties. Tasty with simple ingredients.

Ingredients :

- 8 oz whole grain pasta uncooked

- 1 lb asparagus green beans or snap peas

- 6 medium tomatoes chopped

- 1 cup pitted olives chopped

- 1/2 cup feta cheese crumbled

- 1/3 cup parsley finely chopped

- 1/3 cup olive oil extra virgin

- 1 tbsp oregano

- 2 tsp garlic powder

- 1/8 tsp red pepper flakes

- 1/4 tsp salt

- Ground black pepper to taste

Method : Cook pasta as per package instructions undercooking by 2-3 minutes or until pasta is hard , cooked but firm. While pasta is cooking, start chopping asparagus or green beans. Transfer cooked pasta to an outsized salad bowl. Add asparagus to pasta water and cook until it starts to boil. Remove immediately with a slotted spoon to a bowl with pasta. Add tomatoes, olives, feta cheese, parsley, olive oil, oregano, garlic powder, red pepper flakes, salt and pepper. Stir gently to mix. If you've got time, it is best to let healthy salad refrigerate for half-hour to permit flavors "marry" one another . But you'll serve it warm immediately or cold later.
